Easy Christmas Recipes, Xmas Special Cookies...!!!

Christmas day "Appetizers & Drinks"

Christmas Punch

A delicious punch recommended by Santa Claus for 2005 Christmas Party!

Ingredients

1 Quart pineapple juice
1 Pkg (2 qt) lime Kool-aid
1 Qt lime sherbet
2 Qts ginger ale

Instructions

Mix Kool-aid in punch bowl. Add pineapple juice. Just before serving, add sherbet by spoonfuls. Add ginger ale. For red punch, use raspberry Kool-aid and sherbet.

Xmas day "Breakfast"

Holiday French Toast

Ingredients

12 slices cinnamon raisin bread, dry and firm
2 cups prepared eggnog
1/2 cup butter or margarine
confectioner's sugar

Instructions

Cut bread into 1-inch strips, trimming crusts from any long edges. Pour eggnog into a shallow bowl and dip each strip of bread into the eggnog. Coat each piece well on both sides. Melt butter in a skillet over medium heat. Cook bread on both sides until golden brown. Dust with confectioner's sugar. Makes 12 servings.

Christmas Candy

Wild Turkey Candy

This one is only for the adults since it's made with bourbon!

Ingredients

1/4 cup soft butter
1/3 cup Wild Turkey Bourbon
1 lb. Powdered sugar (you may need more if too runny)
1 bag (about 1 1/2 lbs.) chocolate chips
1 to 1 1/2 bags of pecans

Instructions

1> Mix butter, sugar and bourbon together till stiff.
2> Melt chocolate chips in microwave then stir.
3> Roll the wild turkey mixture into small oval shapes (keeping powdered sugar on hands makes it less sticky) about as big as the pecan. Put pecan 1/2 on each side of ball and dip narrow side in chocolate. Set and serve.
4> Makes about 100 pieces.

Fun Xmas Cookies

Easy as 123 Peanut Butter Cookies

This has got to be the easiest recipe yet for this wonderful cookie. Don't be put off by the simplicity of it...and despite challenges to the contrary, the recipe works WITHOUT flour.

Ingredients

1 cup sugar (you can cut this down to 3/4 cup, if you prefer)
1 large egg
1 cup peanut butter (crunchy or smooth)

Instructions

1> Combine sugar and egg in mixing bowl, stirring till smooth. Add peanut butter and mix in thoroughly.
2> Roll into walnut-sized balls.
3> Place the balls on ungreased cookie sheets at least 2" apart.
4> Flatten with the tines of a fork.
5> Turn 90 degrees and use fork again to create cross hatches.
6> Bake 10 minutes at 375F (or till done). Let cool in pan for 1 minute before removing to cooling rack.

Special Christmas Desserts

Candy Cane Cakes

Ingredients

1 pkg. (10.75 oz.) frozen pound cake, thawed.
1 can (16oz.) vanilla frosting.
Red decorating gel

Instructions

1> Slice the pound cake into 8 equal pieces.
2> Press lightly to make an indention on the cake with a candy cane cookie cutter (use a large one).
3> With a sharp knife cut out the candy cane shape. One per each slice.
4> Place cutouts on a wire rack set over a baking sheet. Transfer frosting into a large microwave-safe measuring cup; microwave on High, stirring at 10 second intervals, until frosting is thin enough to pour, about one minute.
5> Pour frosting over tops and sides of each candy cane cake to cover completely. Let stand until set, about 10 minutes. Use red decorating gel, to pipe stripes onto each cake.

Cranberry Jello Salad

Ingredients

1/2 cup walnuts - chopped
1/2 cup apples - diced
3/4 cup celery - diced
2 boxes cherry Jello
1 can whole cranberry sauce
2 1/2 cup hot water

Instructions

Mash whole cranberry sauce well. Mix with water and Jello till smooth. Let cool, add celery, apples and nuts. Pour into mold and chill.

Popcorn Cake - Recipe for kids!

Ingredients

1 cup popcorn
1/2 cup butter or margerine
1 pack gum drops

Instructions

1> Pop 1 cup of popcorn
2> Melt bag of marshmallows with 1/2 cup of butter (I use margerine). Add the popcorn and 1 pack gum drops cut in half. Mix together and put into a loaf pan or tube pan. Let set and serve as they want for treats.
